Our two Brisket sizes are 3.5 - 5 pounds and 10 pounds on average.

The Brisket comes from the lower chest area. This cut can be tough because it contains a lot of connective tissues, but since our brisket is fullblood wagyu it creates a much more tender and flavorful experience.
